Scrolling on Instagram you will see all types of things and it was interesting becuase I had been thinking about trying to make something sweet and spicy. This beautiful picture with so many colors caught my eye but I kept on searching for something else. Then I seen it again.
A beautiful Mango salsa! It was just what I needed. It was a beautful Saturday in July I was on my way to my favorite produce market called Larry’s Produce in Fairfield Ca. They have all the fresh produce you need. However I discovered when I got there that their mangos where not that ready, still kinda hard. So after I got my parsley, purple onions and lime I went to pick some fresh flowers which has become a favorite thing to do every week. Before heading home I stopped at another local market to try to get a better mango and it was a success!
Once home I put everything in the refrigerator, in my mind I wanted everything nice and cold. It would be better that way, dont you think? Nice and chilled. I watched the video again checked my ingridents list because there is nothing like getting all the way home to realize that you have forgotten something so important. At that point it’s either go back to the store or just abort mission all together. Most times I will just abort, because maybe it just wasnt ment to be.
Well the stars must have alligned because it was all there. I didnt miss anything. First up, choppin the onions. I am not crying, you are! I must of taken 50,000 breaks, I swore there was a way to chop onions where they wont burn your eyes to hell. I thought I had learned that technique from watching master chef and my chef friends but I had failed. I was dertmined though because I couldnt stand to have big pieces of onions in my salsa. Keep in mind I dont event like onions that much so this is a stretch for me to want to even tackle such a dish.
After I completed that task every things else was a breez. It was a beautful masterpiece. I just the mangos and advacado to perfection into square and then scraping them out of their skin. It was giving what it was supposed to gave. I felt so accomplished. Iv now added this to my list of dishes. I may have shared this before how I made it my mission to learn how to cook new meals, so that when I am married and have my family will know how to make something other than baked salmon and salad. I mean my salmon is amazing and my salad is like none other but it’s not enough.
I know the importance and I definately see the value in challenging myself, trying new things, and giving myself grace in the instance where I fall short. I took my time, I was excited and I was praised my self all week for a job well done. The flavors were bursting in my mouth with every bite! The mangos and lime gave it a sweetness that balanced the spice of the onions. I purchased some amazing fresh chips from my local Mexican market that had its own flavor. The purples, greens, yellows all mixed together was like the perfect pice of art on a chip. Chefs kiss to my amazing salsa.



If you havent attempted I think this summer is a great time to try making an amazing salsa.
- 3 ripe mangos, diced
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro leaves, chopped
- 2 large lime, juiced (about ¼ cup lime juice)
- Corn ( I used canned)
- 1 small Tomato
- ⅛ to ¼ teaspoon salt, to taste (Optional)
