ManGO Crazy Salmon

There are those times when you’re feeling good you’re in the kitchen you’re jammin and you think hmmmm lets do something different!! Feeling adventerous you look through cabniets, open the fridge until you find that thing thats either going to ruin you and make you stick to what you know or something thats going to set it off so good you have to tell everyone and even blog about it because you may have did a thing!!!

My plan was to cook salmon as my meat for this weeks dinner, nothing super exciting however I didnt seems to have the sides right. I shrugged it off becuase I’d find something to pair with it, its salmon. As I preped my salmon I decided veggies and a yam for the night we will deal with the rest tomorrow. I had purchased a dressing from Sprouts a few weeks ago but it was too spicy for me so I shelved it becuase I paid too muh to just throw it out. Today was its day to prove itself and to prove to me that I didnt fumble by buying this dressing. I convinced myself that I could put this on my salmon and somehow with the other ingreadiants it wasnt going to set my lips a blaze at the first bite.

After seasoning, squeezing my lemon and cutting lemon slices onto the salmon I baked it at 355 degrees (I pressed the button to long and when I realized it I didnt care) for about 25 minutes. I put the yam in the microwave for 13 min ( it was large) becuase that’s my business. I didnt have time to wait until next year for it to bake given I waited to long to decide on including the yam onto the menu. I put some fresh mixed veggies in a pot with a little water, butter and lemon pepper seasoning I added more fresh carrots becuase carrots are amazing! I dont eat canned vegetables at all.

About 10 minutes before taking the salmon out I added the wild card, the Mango Coconut & pepper dressing and marinade by Cindy’s Kitchen. I took a deep breath and said we gone see as I slid the pan back in the over. The vegetables were done, the yam was almost done and would be soon ready for me to decorate to an extra sweet goodness. 10 minutes seem to take forever I put a glass in the freezer and pulled out some wine. I felt it in my bones that the salmon was gone be jumping but in case it wasnt the wine was going help me not feel so bad.

I like watching my food bake through the little over window, all the spices crashing together, the sounds of the food cooking, watching the color change as a signal to how much longer it needs to cook or if its cooked too long. I seem to never want to use a timer, I dont know who I think I am.

It is time to see if it was a flop or a grand slam. I plated every thing, decorated my yam with a cut in half and then down the middle; adding in my sugars, cinnamon and butter. Took my plate to my seat, poured my wine and got ready for my first bite but I couldnt not take a picture first. Fork into the salmon and its moist, it smells great, and the first bite is a mutha freaking HIT!!!!!!!! insert bank head bounce finishing with the harlem shake!

I watched a movie sipped my victory wine and enjoyed my night. Give it a try!

Ingredients

  1. 2lbs alaskin salmon
  2. 2 lemons
  3. lemon pepper seasoning
  4. galic powder
  5. honey
  6. mango coconut pepper dressing & marinade
  7. 1 yam
  8. cinnamon
  9. brown sugar
  10. sugar (optional)
  11. mixed vegetable
  12. butter

wash salmon, pre heat over 350 degrees season salmon with 3 & 4. bake for 25 min. 10-15 mins before taking out add honey and mango dressing.

Bake yam by wrapping in foil for 45 min at 350 degrees or microwave cause that’s you’r business

Cook veggies in small pot add water, butter, and seasoning. Cook until soft. If all the color is gone you messed up.
